Method
- Preheat the oven to 350F (175C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a small bowl, combine the breadcrumbs and milk. Let sit for 5 minutes so the crumbs soften.
- In a large bowl, combine the ground beef, soaked breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands just until combined; do not overmix.
- Shape the mixture into a loaf about 9x5 inches and place it on the prepared baking sheet, or press it into the loaf pan.
- In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
- Brush half of the glaze evenly over the top of the meatloaf.
- Bake for 45 minutes, then brush on the remaining glaze and continue baking for 15 to 20 minutes, until the internal temperature reaches 160F (71C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This helps it hold together.
