Homemade Meatloaf

Ingredients
  

  • 2 lbs ground beef 80/20 blend
  • 1 cup plain breadcrumbs
  • 2/3 cup whole milk
  • 2 large eggs lightly beaten
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 2 tablespoons Worcestershire sauce alcohol-free
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup ketchup for the glaze
  • 2 tablespoons brown sugar for the glaze
  • 1 tablespoon apple cider vinegar for the glaze

Method
 

  1. Preheat the oven to 350F (175C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a small bowl, combine the breadcrumbs and milk. Let sit for 5 minutes so the crumbs soften.
  3. In a large bowl, combine the ground beef, soaked breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands just until combined; do not overmix.
  4. Shape the mixture into a loaf about 9x5 inches and place it on the prepared baking sheet, or press it into the loaf pan.
  5. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.
  6. Brush half of the glaze evenly over the top of the meatloaf.
  7. Bake for 45 minutes, then brush on the remaining glaze and continue baking for 15 to 20 minutes, until the internal temperature reaches 160F (71C).
  8. Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This helps it hold together.

Notes

Made with 100% halal-friendly ground beef, no pork and no alcohol in any ingredient. Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently until warmed through. For food safety, always cook ground beef to a minimum internal temperature of 160F as recommended by the USDA.
