Method
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes, until softened.
- Add the garlic and cook for 30 seconds, until fragrant.
- Add the ground beef, breaking it apart with a spoon, and cook for 6-8 minutes, until browned and no pink remains.
- Drain any excess fat, then stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute, until fragrant.
- Stir in the tomato paste and beef stock. Simmer for 3-4 minutes, until slightly thickened, checking that the beef reaches 160F internally.
- Taste and adjust the seasoning if needed.
- Warm the tortillas, fill with the beef mixture, and top with lettuce, tomato, cheese, and a squeeze of fresh lime.
Notes
This recipe is completely halal, made with ground beef and no pork, wine, or alcohol of any kind. Use halal-certified beef. Store leftover beef filling in an airtight container in the fridge for up to 3 days.
