Homemade Beef Tacos

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp tomato paste
  • 1/4 cup beef stock or water
  • 8 small corn or flour tortillas warmed
  • 1 cup shredded lettuce for topping
  • 1 cup diced tomato for topping
  • 1/2 cup shredded cheddar cheese for topping
  • 1 lime, cut into wedges for serving

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes, until softened.
  2. Add the garlic and cook for 30 seconds, until fragrant.
  3. Add the ground beef, breaking it apart with a spoon, and cook for 6-8 minutes, until browned and no pink remains.
  4. Drain any excess fat, then stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute, until fragrant.
  5. Stir in the tomato paste and beef stock. Simmer for 3-4 minutes, until slightly thickened, checking that the beef reaches 160F internally.
  6. Taste and adjust the seasoning if needed.
  7. Warm the tortillas, fill with the beef mixture, and top with lettuce, tomato, cheese, and a squeeze of fresh lime.

Notes

This recipe is completely halal, made with ground beef and no pork, wine, or alcohol of any kind. Use halal-certified beef. Store leftover beef filling in an airtight container in the fridge for up to 3 days.
