Method
- Pat the wings completely dry with paper towels; this is the most important step for crispy skin.
- Toss the wings with oil in a large bowl until every piece is lightly coated.
- Add the baking powder, garlic powder, smoked paprika, salt, and pepper, then toss again until evenly coated.
- Arrange the wings in a single layer in the air fryer basket, leaving space between each piece.
- Air fry at 400 degrees F (200 C) for 20-25 minutes, flipping the wings at the 12-minute mark.
- Check that the thickest part of the wing reaches 165 degrees F with an instant-read thermometer.
- Toss immediately in sauce while hot, then serve right away.
Notes
For extra-crispy skin, don't overcrowd the basket; cook in two batches if needed. Store leftovers in an airtight container in the fridge for up to 4 days and reheat in the air fryer at 375F for 4-5 minutes to restore crunch.
